Ingredients:-
300 – 400 gm chicken thighs (no bone)
2 cloves garlic
2 cm fresh ginger
2 tbsp tamari or soy sauce
Splash of sesame oil
400 gm coconut cream
650 gm water
200 gm basmati rice
Any veg of your choice – capsicum, celery, onion (thin wedges), carrot, beans, broccoli, shallots
Sesame seeds
Handful cashews – roasted or raw
Dash of sesame oil
Dash Tamari or soy
½ cup raw or roasted cashews
2 cm fresh red chilli or more if you like it hotter
½ bunch fresh coriander
2 cloves garlic
2 cm fresh ginger
2 tbsp tamari or soy
½ tsp Rabadura sugar (optional)
1 tbsp chicken stock paste or vegetable stock paste
Method:-
1. Cut chicken into bite-sized cubes and place in bowl
2. Place garlic and ginger into Thermomix bowl (TB) – 5 secs Speed 7. Scrape out and add to chicken along with Tamari and sesame oil. Do not rinse TB.
3. Put coconut cream and water into TB. Fix lid in place without MC.
4. Set rice basket on top of Thermomix lid and measure 200 gm rice then rinse rice under cold water and place basket into TB and replace lid.
5. Place Varoma tray on top of lid and add marinated chicken cubes. Spread the chicken out so that the steam can come through the holes in the tray. Start cooking at Varoma temperature for 20 minutes at Speed 4.
6. Meanwhile chop your vegetables of choice and add them to the Varoma tray.
7. Sprinkle the sesame seeds, cashews, sesame oil and Tamari over the top of the vegies.
8. When the 20 minutes are up remove the rice and place in Thermoserver to keep warm.
9. Stir the chicken and vegies and cook for another 7½ minutes, Varoma temp Speed 2 making sure that the chicken is cooked through. Remove lid from Thermoserver and place Varoma tray on top of the rice to keep warm.
10. To the juices and coconut cream in the TB add the rest of the ingredients and blend on Speed 9 for 1 minute.
11. Serve the rice, chicken and vegies with plenty of the delicious sauce.
