This is a quick and easy pie for the holidays. You can top it with your favorite topping and some toasted coconut.

In a medium-size mixing bowl, beat the pudding mix and milk with a whisk for 2 minutes. Pudding will be soft-set in 5 minutes. Pour into 9-inch ready-to-use shortbread pie crust. Refrigerate for 15 minutes or until firm.
Place the coconut into a small saucepan over medium-low heat. Stirring constantly, allow the coconut to brown a little or to your liking.
Top the pie with Cool Whip and sprinkle with the toasted coconut. Store in the refrigerator.
You can also top this pie with Ready Whip Topping or make your own meringue.
