The tase is somewhat medicinal. Some can't stand it, but others love it. It is considered especially beneficial for the kidneys and for digestion. Many swear by it as a key factor in recovering health, and report complete recovery from digestive problems.
Pierce green coconuts with an ice pick, screwdriver or heavy cleaver. Drain juice through a non-metallic strainer into a glass bowl. Place juice in a 2 quart glass container and stir in kefir powder or grains. Seal the top of the container and let sit for 48 hours at room temperature.
Store the kefir in original glass container by transferring to the fridge or transfer to glass beer or soda bottles capped with a wire-held caps. Don't use a wire-held stopper, as these explode and can be quite dangerous!
Grains: reuse immediately to make more or else store them in the fridge in a glass jar with 1 cup filtered water or coconut kefir plus 1 tablespoon sucanat or rapadura. The grains should double in size every time you use them.
Powder: reserve 1/2 cup finished kefir to use as the inoculant for the next batch of coconut water. You can do this 5 or 6 times before you need to use a fresh packet of powder.
