Saltines may sound strange for a sweet crust, but the complement the intense lemon flavor perfectly.
Filling: Mix dry ingredients in saucepan. Add boiling water. Cook til slightly thickened. Temper Ener-G and add in. Add juice, rind and pat of margarine. Cook a few minutes longer.
Mix dry crust ingredients together. Rub in margarine and add soy milk. Pat half of mixture into square pan. Pour lemon filling over, sprinkle remaining crust over top. Bake at 350? for 30 min.
