Preheat to 350 and line cookie sheet with parchment. Loosely sprinkle 1c coconut on cookie sheet and bake for 6-7 minutes on top rack. In large bowl combine coconut, flour and salt. Separately mix milk, vanilla, almond extracts, egg until blended, fold into dry mixture. Place heaping tablespoonful of batter, 2 inches apart, on lined cookie sheet. Bake 12-14 minutes or until golden. Move parchment to wire rack and cool 30 minutes. In saucepan over low heat, melt chocolate chips with oil and drizzle over cookies. Allow another 30 minutes for chocolate to set.
