This cake is so great. The texture is super light and the flavour is very sweet.
Filling:
In saucepan, combine pineapple, pineapple juice, sugar, cornstarch, and lemon juice. Stir until boiling. Simmer for 3 minutes. Cool.
Cake:
Sift flour, baking powder, salt.
In separate bowl, stir milk and coconut milk together.
In separate bowl, beat butter and sugar for 5 minutes. Add in egg, one at a time, and vanilla and coconut extract.
Fold together all 3 bowls, in 2 phases.
In 350F oven, bake for 35 minutes. Cool in pans for 3 minutes. Remove to wire rack to cool completely.
Frosting:
Beat butter for 3 minutes. Slowly add in sugar. Then add in cream and coconut extract and beat for 3 minutes, until light and fluffy.
Assembly:
Cut cake layers into 2. Layer: Cake, Filling, Cake, Frosting, Cake, Filling, Cake. Frost outside with remaining.
