From Fins Up! (Jimmy Buffet) Cooking Class with Leigh Ocs
Preheat oven to 350F. Grease a baking sheet.
Rub each salmon fillet with 1 teaspoon mustard and then roll it in coconut to coat. Arrange in a single layer on prepared baking sheet and bake 15-20 minutes, until coconut is golden brown and fish flakes easily when pressed.
While salmon cooks, heat remaining ingredients in a small saucepan over low heat until warm and marmalade melts. Stir well. Serve salmon with sauce.
