An amazing addition to an already irresistible cut of meat.
Preheat broiler and move your baking rack up to broiler height.
Dry Rub:
Mix salt, pepper, and coffee in a bowl. Set aside.
Allow steaks to sit out of the refrigerator for 10 minutes. Rub olive oil into steaks and coat steaks in the dry rub.
Heat an empty pan, then add 1 tbsp butter. Sear one steak on each side for one minute each side, then transfer to a baking dish. Repeat with second steak.
(Note: if the butter is not enough to sear the steak, keep a box of organic broth handy to deglaze the pan and keep the steak from burning.)
**Your steaks will appear charred and black. Don't worry! It's just the crust carmelizing.**
