Preheat oven to 400.
Spray a baking sheet with nonstick spray and set aside.
In a blender or food processor, grind cereal to a breadcrumb-like consistency. Transfer crumbs to a medium bowl, and add all other topping ingredients. Stir until completely mixed. Set aside.
Combine all scone ingredients in a large bowl. Mix well. Evenly form and place four mounds of batter on the baking sheet. Bake in the oven until mostly firm, about 8 minutes.
Remove sheet from the oven. Using your figures to help form the crumbs, evenly top each scone with the topping mixture, lightly pressing the crumbs into the scones. Return sheet to the oven, and bake until firm and cooked through, about 4 minutes.
Allow to cool slightly. Then enjoy!
