1 Preheat oven to 375 degrees. Stir together the sugar and cinnamon in a small bowl; set aside.
Grease 8" cake pan.
2 Make streusel by adding all streusel ingredients in a bowl or food processor until mixture is crumbly and butter is combined. Cover and refrigerate.
3 Combine dry ingredients in a large bowl and set aside.
4 Whisk together wet ingredients.
5 Pour wet ingredients over dry and fold with a rubber spatula. Pour 2/3 of batter into cake pan in an even layer.
6 Sprinkle streusel over batter. Top with remaining batter. Sprinkle cinnamon sugar over whole cake. Bake 30-35 minutes. Cool 10 minutes before serving warm.
