Boil water and cook noodles for 3-4 minutes or until done. Chill noodles in ice bath to immediately stop cooking. Drain and set noodles in refrigerator until ready to use.
Sauce: Add all ingredients to a bowl and mix well. Chill until ready to serve.
To serve, add one serving of noodles to a small bowl and garnish with chicken breast, carrots, cucumber, avocado, scallions, cilantro or any of your favorite toppings. Drizzle sauce over the top and serve chilled.
