Pure vanilla is key to this recipe. Try adding a generous pinch each of ground cardamom and nutmeg to the egg mixture for an extra flavor boost.
1. Set oven to 350 degrees.
2. Whisk the eggs with the sugar in a large bowl until blended. Gently whisk in the milk, vanilla, and salt.
3. Sprinkle the Grape nuts cereal evenly over the bottom of a shallow 2-quart baking dish. Pour the egg mixture over the Grape Nuts. Place the baking dish into a larger baking pan and fill the larger pan with hot water to come halfway up the sides of the pudding dish. Carefully place the pan into the oven. (Or fill both pans while on the oven rack) Bake 35-40 minutes or until a small knife inserted about 2/3 of the way into the center comes out clean.
4. Cool on a wire rack for at least 30 minutes. Serve the pudding warm, at room temperature, or chilled, topped with whipped cream, if desired.
