Traditional southern greens with a lot less fat.
Cook bacon in a deep heavy stock pot over medium heat until crisp. Remove bacon with slotted spoon and set aside to drain on paper towels. Slowly add chicken stock to bacon grease, then the vinegar, sugar, pepper flakes,1/2 of the bacon and turnip roots if using. Put 1/2 of collards into pot and stir as they wilt slightly. Add remaining collards and stir until combined. Simmer, covered, for 30 minutes. Stir well and simmer, covered, for 30 minutes more until tender.
Serve topped with remaining bacon.
