Cook smoked meat in a crockpot w 2 cups water, tablespoon of cayenne pepper, 1 medium onion, chopped and 2 tablespoons sugar.
Wash the greens in sink full of salted water which will put any grit into suspension and float it off down the drain. If there was a lot of grit, do this twice. if you buy prewashed, you can just quickly rinse them.
Slice up the greens into bite sized strips. Put sliced greens into bags or something until the smoked meat is fully surrendered - falling off the bone. I usually leave the meat overnight. and I freeze the greens in bags couple of weeks ahead sometimes - I don't even blanch, just freeze sliced up in double bags.
So meanwhile, you are cooking the meat until you feel like cooking the greens, but at least 12 hours.
Now strain the smoked meat broth and to that add sliced greens and remaining ingredients and cook until desired doneness.
