In large fry pan, put 3 to 4 T. Olive oil, add the onion, green chilies, jalapenos, fry until tender. Then add the ground beef
To the onion mix. Fry until done. Then you will add: the soups, garlic, Rotella tomatoes, enchilada sauce, and the black Eyed peas. You can add the hot sauce if you want to that is opt.
Spray a 9 ×13" casserole dish with cooking spray, line the bottom with corn tortillas, then add the meat mixture, then add cheese on top. Then you repeat the process over again ending with the cheese on to. You will have two or three layers.
Bake in a 375 degrees oven for 45 min. Or until nice and brown and bubbly.
You can use foil to cover and bake this, but I usually dont.
