This is a new twist on caprese salad. It creates an delicious and warm appetizer that everyone will enjoy.
Pour the olive oil into a medium sized pan and heat to medium level heat. Chop the fresh basil into small pieces and put aside. Slice the tomatoes at a medium thickness and then slice the mozzarella a bit thinner then the tomato but at a width that around equal to the tomato. Place the mozzarella slices on top of the tomato slices then sprinkle the basil on top of everything. Place the caprese into the pan and let cook for a minute or two until the mozzarella is partially melted. Remove the caprese from the pan and place onto a plate, then sprinkle with salt and pepper to taste. Garnish plate with basil leaves. Serve immediately.
