Cream sugar and oleo. Add egg and mashed bananas and mix thoroughly. Mix dry ingredients; add to creamed ingredients in three parts, mixing thoroughly after each addition. If using nuts, add them last and mix by hand. If using wheat germ or flaxseed meal, add that to flour mixture before adding to batter.
Drop on cookie sheet about the size of a walnut (I use my small drop cookie scoop). Bake in 350 F oven for about 10-12 minutes or longer, until they are lightly browned. (It may take up to 20 minutes, depending on your oven).
The wheat germ or flaxseed meal adds a nutty flavor without having the pieces of nut in the cookies. We have children in our "clan" who do not like nuts (or can't have them because they are too young or wear braces), so this allows for flavor without the little pieces.
