Preheat oven to 350
Whisk together dry ingredients, set aside.
Cream wet ingredients w/ hand mixer on low, increasing to high. Should be light and fluffy.
Stir dry mix into wet mix ntil no flour is visible. Then stir in oats, raisins, and chocolate chips. (Note: over mixing will develop the gluten and make a tough cookie. Mix only as much as is necessary)
Use ~2tbsp dough per cookie, drop 2 inches apart on greased baking sheet.
Bake 11-13 min, (till golden on top but still moist beneath cracks on top)
Remove from oven, let stand on cookie sheet 2 min before transferring to wire rack to cool.
the key to these is to get the wet mix nice and fluffy. Stand mixer works best - let it fluff for 4-5 min, scraping once or twice.
