MISE EN PLACE: Preheat oven (convection) to 175°C (350°F)
1) Beat brown sugar, peanut butter, butter, vanilla, and egg on medium speed until creamy. Blend in flour and baking soda on low speed until well blended.
2) Shape dough into 1 1/4-inch balls. Place 2-inches apart on ungreased cookie sheets. Flatten in a criss-cross pattern with tines of a fork dipped in sugar.
3) Bake (1st and 3rd from bottom) 5-7 minutes or until set. Cool on cookie sheet for 2 minutes; remove to wire racks to cool.
If using conventional oven, adjust to 190°C (375°F) and 7-9 minutes.
