A cooling, refreshing spanish salsa. Its an ideal accompaniment to barbecued meats and spicy dishes.
Wash the mint, shake dry and finely chop. Wash the pepper and cucumber and dice as finely as possible.
Place the yoghurt into a bowl and mix with the cucumber, pepper and garlic. Season with salt and pepper, add the lemon juice then mix again.
Transfer to a serving bowl and chill before serving.
