Hot Indian Pork
-In a saucepan, combine pork, salt and tumeric.
-Add 1/4 cup water and bring to a boil over medium heat. Reduced heat to medium-low. Cover and simmer until pork is fork-tender and water has been aborbed, @ 30 to 40 minutes
-In another saucepan, heat oil over medium heat. Add onions and sautee until golden, 6 - 8 minutes.
-Add ginger and chiles and saute until chiles are softened, 6-8 minutes
-Add pork and tamarind and mix well. Sautee until thick masala enrobes pork, about 5 minutes.
-Stir in pepper and mix well
-Serve hot
