In a pan over medium-high heat in 2 tsp oil, seer chicken until golden brown, 2-3 minutes per side. Transfer to a baking sheet and roast in oven until chicken reaches an internal temperature of 165°.
In the pan used to seer the chicken, cook mushrooms and pearl onions in 2 tsp oil until lightly browned and mushrooms have released their liquid. Remove from pan and set aside. In same pan, add red wine and demi-glaze. Cook over medium-high heat until reduced by half, 4-5 minutes. Add thyme and butter - whisk in.
Place chicken on a bed of mushroom & onions and top with wine sauce.
