Classic Scallop Dish
Source: Dorset Inn
Heat a saute pan over medium high heat.
Add some olive oil.
Season then sear the scallops.
Remove from the pan and reserve.
Add mushrooms and shallots to the pan and saute until liquid is released and reduced slightly.
Deglaze with brandy.
Add cream and reduce by 1/3.
Season with salt, pepper and nutmeg.
Spoon cream sauce into oven proof baking dishes.
Arrange 4 scallops over each dish.
One slice of cheese over the scallops.
Sprinkle paprika then parsley over the top..
Bake at 425 for 10 to 15 minutes, until the cheese is melted and the sauce is bubbly.
