A twist on a traditional French toast recipe.
Scramble 3 large eggs in a medium size bowl. Add cinnamon and vanilla extract to scrambled eggs in bowl. In a separate bowl squish all blueberries with a potato smasher or whatever you have to squish blueberries don't over squish! Just squish enough so the blueberries are no longer round ( I honestly just squish blueberries in my fingers and add toss in egg mix) . Toss blueberries in egg mix and stir together. Spray or butter frying pan and start to heat on low. Place 1 slice of bread in egg mix be sure to cover both sides of bread with egg mixture when it's fully covered place in frying pan and scoop out some blueberries on top of the bread that's in the pan and sprinkle a little extra cinnamon on top of bread and quickly turn toasted bread over and repeat (add blueberries and more cinnamon) cook until bread looks toasted add to plate lightly sprinkle confectioner sugar (powdered sugar) on top,with maple syrup and whipped cream on top. Continue processes with the rest of the bread to how ever many pieces you choose to have of French toast.
