Even if you don't love cornbread, you will like this recipe.
Preheat a 7 drop biscuit pan or 8" cast iron skillet in a 425 degree oven.
Fill only 4 holes for this size recipe.
Sift together first seven ingredients. Combine and whisk together the Buttermilk and Egg, then
add 1 1/2 T. bacon fat to the egg mixture combine well. Stir liquid ingredients into dry with a few
swift strokes, add frozen corn. Add 1/2 T. of bacon fat to skillet and pour in batter.
It will make a cracklin noise - hence the name.
Bake for 20 minutes.
