Yummy corn chowder with ham, potato, and veggies
1. Cut potatoes and ham into 1/2 inch cubes. Set aside separately.
2. Dice bell pepper and celery (can lump them together).
3. Heat butter in medium saucepan over medium heat.
4. Cook bell pepper and celery until crisp-tender.
5. Stir in flour until integrated.
6. Add broth, milk and corn gradually until blended.
7. Add potatoes and bring to a boil. Reduce heat and cook uncovered until potatoes are tender (10 min).
8. Stir in ham until heated through.
9. Garnish with cheese, bacon and chives. Salt and pepper as needed.
(NOTE: Ham can be replaced with 8 oz bay scallops)
