This is a beautiful and delicious dish. Light and flavorful.
Heat a medium skillet over medium heat. Add butter, garlic and white part of scallions and lightly saute for 3 min, then add corn and season with salt and pepper. Cook 5 min. then add half and half. Cover and cook over medium low heat for 10 min. Uncover and stir. Add tomato and basil and cook for 1-2 more min. Adjust seasonings if needed.
