Whip whites to soft peaks.
Reserve yolks.
Drain canned corn. If creamed corn is really watery, drain a little liquid too.
Mix yolks, both cans of corn, salt and baking powder in a bowl. Blend thoroughly.
Fold melted butter and whipped egg whites into the corn mixture. Be gentle to keep batter light.
Let batter sit for a few minutes for baking powder to kick in.
On a medium-hot griddle, use bacon grease or butter, cook about 1/2 or 1/3 cup dollops of batter like a pancake. Flip once.
Best with butter, maple syrup, soft set eggs and bacon.
