Mix all ingredients together in a bowl.
Using a deep fryer or large skillet with cooking oil, drop corn mixture by tablespoons into hot oil.
Fry 4 - 5 minutes, turning the corn fritters once if using a skillet. They will float to the top when ready if using a deep fryer.
Remove from oil and place on papertowel lined plate or platter to drain.
Serve as is, or serve with syrup, or dust with confectioner's sugar.
You can substitute chopped green onion for regular onions or use a different shredded cheese in place of the shredded cheddar. Make sure ingredients are mixed throughly with no dry spots or dry ingredients left in bowl. Check fritters during frying process to make sure they do not over brown.
