Make a light roux of the oil and flour ; add the chicken broth and seasonings . Bring to a boil ; When the broth begins to thicken , add the vegetables. Return to boiling, reduce heat, and allow to simmer for about an hour and a half .
Gumbo file (pronounced "fee-lay") is ground up sassafras leaves, a common ingredient in Cajun cooking. I can find it at my local grocery, or you can find it online at Penzey's Spices. The flavor isn't overwhelming, and it also acts as a thickening agent.
