This family recipe is from my Aunt Carolyn. It was a traditional favorite for Thanksgiving or Christmas meals.
Preheat oven to 350. Grease 9" square pan. Combine all ingredients except cheese. Turn half into greased pan. Top with 1/2 cheese. Then remaining half of mixture. Then remaining cheese. Bake 1 hour until golden brown and firm. Cut into squares.
Adjustments I make often:
Doubled recipe and used 13x9 pan.
Substituted 1/2 creamed corn for whole kernel corn. (Makes it firmer and has more substance)
Adjustments I have made occasionally:
Substituted buttermilk powder for buttermilk. (Aunt Carolyn's shortcut)
Should be nice golden color. when done. Be sure it is firm but not brown before removing from oven. I shake pan gently checking to see if it is still runny and then insert a knife in center to check doneness. Should come out clean when it is ready. Can be prepared overnight/early and baked before serving. Makes a wonderful dish to take to take to party or potluck.
