These easy pan fried pork chops are stuffed with corn, chiles and cheese stuffing. Substitute chili powder for the chiles if you like
1) Cut off excess fat from pork. Carefully slit a pocket in each chop. Rub with garlic.
2) In a skillet, melt butter. Saute onions for a few minutes. Stir in corn, bread cubes and chilies. Cook for a minute or two.
3) Stir in cheese, salt and pepper. Fill chops with stuffing.
4) In a large, heavy skillet, heat butter. Brown chops on both sides carefully turning so that stuffing stays in chops. Lower heat and cover.
5) Cook 10 minutes on each side (until done through). Remove chops to platter.
6) Add one tablespoon butter. Stir in flour. Slowly add enough water to make a thin gravy, scraping bits of meat and stuffing from the pan.
7) Serve sauce over chops.
