TexMex cornbread. Its too moist to be bread and too dry to be pudding.
Preheat oven to 350f. Butter or spray a baking dish. A square one works best. Set aside.
Combine the corn mix, cornmeal, pepper, salt and brown sugar in a large mixing bowl. Add the remaining ingredients and mix well. A simple fork for mixing works great. Pour into baking dish and bake for one hour or until golden brown.
Sharp Cheddar cheese or "mexi-blend" works best.
