Suggest a better description1. Cook Giblets in 3 cups of chicken broth for about 1 hour. You can add celery and carrots to the broth if you wish and keep the broth for the gravy.
2. Dice the meat from the neck and, if desired, the giblets.
3. Cut 1/2 cup of butter into small pieces and mix with the cornbread.
4. Sweat celery and onion in the other 1/2 cup of butter until softened, then add to cornbread.
5. Add seasonings and mix thoroughly.
6. Stir in diced meat/giblets.
7. Sprinkle broth over cornbread mixture until dressing is of desired moistness.
Can be used as stuffing for about a 12 pound turnkey or baked in the oven.
