Yeah, you could use a Mix, but this is also inexpensive, has more protein and less sodium and you have your choice of healthier fat - may use coconut oil one day.
combine dry ingredients and mix well
combine wet ingredients except melted butter and mix well
combine wet with dry just until moistened then add melted butter - mix until blended.
spray the pan or the muffin pan. for muffins, add parchment paper liners and spray them once they are in place.
place in 400 oven whether 9 x 13 pan or muffins
muffins about 15 - 17 minutes, pan about 20.
Half the recipe makes 1 12 cup muffin pan full.
Use Parchment baking cups and they DID NOT STICK to the bread at all, the muffins fell out of the pan and the papers fell off the muffins. I happened across these today looking for the standard baking cups for muffins and cupcakes. These are all I will ever use in future. $1.99 at a local grocer in Dearborn Michigan. I can't believe I've made it this long without knowing about these.
12 cup muffin pan needs about 15 to 17 minutes to fully cook, not 20 like the 13x9 pan would need.
