You cannot rush this recipe, it takes time but is oh so worth it... It's nothing like that nasty stuff that comes in a can. Lacking corned beef, I sometimes just substitute bacon and make Bacon Hash, essentially the same way.
Cut pre-cooked corned beef into cubes. Cube potatoes in a small dice, you can wash and not peel them. In a large skillet (preferably cast iron), melt 1/4 stick butter and 2 T olive oil, add onions and carrots, season with salt and pepper. Saute until very soft, add garlic and cook for a minute or 2. Add corned beef and potatoes. Season with salt and pepper. Continue to stir and cook until potatoes are done and everything is browned scraping the pan frequently to get up the browned bits.
This will take a long time. It's very important that the potatoes be crusty. Season with onion and garlic powder and check seasoning level by tasting. Add remaining butter and more olive oil as necessary during browning potatoes. It's best when everything has a brown crusty edge.
Serve a portion with a fried egg on top.
