Place corned beef in baking pan. Add Guinness, about enough to cover half the meat.
Cover. Bake for 4-5 hours at 350°.
During baking, baste with a shot or two of Jameson’s whiskey.
Beef is cooked when fork goes easily into the meat.
Drain, reserving 1 cup of liquid.
Make mixture of 6-8 ounces of honey and ¼ cup Jameson’s.
Pour over beef. Cover again, and bake until honey caramelizes.
Let rest for 20 minutes and carve.
Serve with reserved liquid.
