1. Preheat oven to 350 degrees F. Grease 3 3x10 inch pans
2. Combine the sugar, flour, salt, cinnamon, soda, oil. With an electric mixer, add the eggs one at a time. Stir in the carrots and the walnuts. Pourthe batter into prepared baking pan. (Use paddle for mixer)
3. Bake at 350 degrees f for 25-35 mins. Check on cakes often.
Combine butter and cream cheese and let soften.
When soft, put in electric mixer using the paddle to mix it and then slowly add in the sifted sugar and vanilla.
