1. In a medium bowl, whisk together flour and salt
2. With the electric mixer bowl, use paddle, beat butter and powder sugar and zest together on medium speed until fluffy. About 2-4 minutes
3. Reduce speed to low and slowly add the flour mixture until combined.
4. Divide dough in half. Place onto a sheet of parchment paper and roll into a log and 1 1/2 inches in diameter. Twist ends and refrigerate for at least an hour.
5. Preheat big oven to 275F (350F reg) Cut logs into 1/4 inch slices. Place cookies on paper lined cookie sheets one inch apart
6. Bake for 15-17 minutes till cookies are golden around the edges
7. Transfer and cool on baker's rack
