On work surface, lay chicken breasts out and top with 1 ham slice, 1/4 rabe, and 1 cheese slice. Fold breast in half and secure with toothpick.
Place cornflakes in bowl. combine egg and paprika. Coat each breast with egg then cornflakes. Transfer to baking sheet and bake 30 minutes. Let rest 5 minutes after baking.
In saucepan, whisk sour cream, mustard, and 1/4 c water over medium heat 2 minutes.
Discard toothpicks and slice each breast. Drizzle with sauce
