Milanese veal chops (from "The Silver Spoon") with Rocket (as I had it a couple of years ago in Milan).
Dip each chop in beaten egg, then apply breadcrumbs.
Fry chops on both sides until crumbs are golden brown.
Let chops rest for 30 mins.
Reheat chops in oven at 180 degrees C, or 350 degrees F for 30 mins.
Serve chops on warm plate, top with handful of rocket and tomato slices.
Sprinkle with truffle oil.
You can substitute veal chops with beef or pork chops, or very thin veal schnitzel. Latter makes the cooking time a lot shorter.
