Old fashioned cottage pie.
Leftovers freeze well in single serves for weekday lunches
Fry onions & carrot in a large deep saucepan until softened.
Add mince and brown for a few minutes
Add curry powder, sauces and beef stock. Simmer for one hour
While the meat is cooking, boil the potatoes in salted water until very soft and turn on the oven to 185 C
When the meat is done, add the zucchini and the other vegetables. Simmer 20 minutes or until all vegetables are tender. Check flavour and add salt if necessary
Put cornstarch into a cup and add about 1/4 cup water to make a runny paste
Add cornstarch mix to beef and vegetables and stir through until it thickens, then gently heat another 5-10 minutes
For the Topping:
Mash potatoes well (or use bamix) with milk and/or cream until they are a smooth, spreadable consistency and then flavour with salt and pepper
Spoon beef mixture into a large baking/lasagne dish(s)
Gently top with mashed potatoes spreading with a fork to completely cover the meat
Place in oven and bake for 45 minutes till bubbling around the sides
Take out of the oven and sprinkle on the cheese
Bake for another 10-15 minutes or until the cheese has melted
Leave to cool for 10 minutes and serve with a green salad
