In a medium bowl, drizzle couscous with olive oil to coat lightly and toss to blend. In a saucepan, bring water with oregano and salt to a boil. Pour seasoned boiling water over the couscous, and butter, stir briefly to blend, and cover with plastic wrap, setting aside for 20 min. After 20 min. , liquid will be absorbed by couscous. Fluff with fork and add tomato, cucumber, parsley, garlic, lemon zest and juice, salt and pepper and mix well.
