Slow cooker beans with ham and/or bacon.
Soak beans overnight with 2-4 tablespoons of baking soda to make them easier to digest. This recipe works well with bacon, ham, smoked sausage, a ham bone, or a combination.
In large pot over medium heat, brown bacon or with ham bone or leftover ham slices or chunks. Add onion, garlic and peppers and cook a few minutes until they soften. Add beans, bacon mixture, sausage and tomatoes to slow cooker. Add water to cover and to desired consistency, and add salt and pepper to taste. Cook on low setting for 6-8 hours, or longer.
