High-protein, low-fat breakfast that's easily adapted to a camp stove or campfire. Serve with oatmeal, muesli, or toast--or for lighter fare, with fresh greens and berries
In a 2-quart pot, combine broth, beans, onion powder, garlic powder, salt, and pepper. Bring to a boil, cover, and reduce heat to simmer. Spray pan and fry eggs, seasoning to your liking (I use salt, pepper, and garlic powder). When eggs are done, spoon beans into two bowls and top with two eggs each. Sprinkle with parsley and cayenne pepper just before serving.
