very tasty and easy to prepare appetizer
Preheat oven to 350 degrees. Wipe mushrooms clean with a damp paper towel. Remove stems and set aside. Spray a baking sheet lightly with cooking spray. Place mushroom caps on baking sheet (de-stemmed side up). Chop stem pieces into small bits. In a mixing bowl, beat cream cheese until smooth. Blend in finely chopped garlic, onion, spinach, chopped stem pieces. Blend in dill if desired. Spoon blended mixture into mushroom caps, and sprinkle lightly with Parmesan cheese. Add a small sprig of parsley to the top of each cap. Bake in oven for 20 to 30 minutes until heated through. Serve immediately.
Note: Bring cream cheese to room temperature ahead of time to allow for easier blending and a smoother consistency.
