Yum!!!
In a large bowl, mix all ingredients, except the flour and peanut oil.
Shape into patties and lightly dust with flour.
Heat oil in a large skillet over medium heat.
When hot, carefully place crab cakes in pan and fry until golden brown. (about 4-5 minutes)
Turn and fry on the other side until golden brown (about 5 minutes).
Serve with cocktail or hot sauce.
*I found that it works best if you put the formed cakes in the refrigerator for 20-30 minutes before frying. It will help them stay together.
