Suggest a better descriptionPrepare the Lemon Aioli:
Mix together the mayonnaise, 1/8 tsp. cayenne pepper, juice & zest of lemons, garlic, and salt to taste. Adjust seasonings as necessary.
Make crab cakes:
Saute onion and celery in 3 tbsp. butter until transparent. Let cool to room temperature.
Drain crab meat and remove any small shell pieces. Combine crab, onion/celery mixture, 1/4 tsp. cayenne pepper, 1/2 cup Lemon Aioli, and bread crumbs, combining gently by hand (do NOT overmix). Form into cakes.
Coat each crab cake in additional bread crumbs. Saute in butter and olive oil until warm through.
Serve with the remaining Lemon Aioli on the side.
Makes about 14 small crab cakes.
