Suggest a better descriptionMash up the cooked potaotes, with a little butter, curry powder, coriander and double cream then add a little diced green chilli, a red onion and then the crab meat. Season. Mould into croquette shaped pieces about 85g-110g in weight (3-4 oz). Place in the seasoned flour,the beaten egg and then the breadcrumbs. Start to shallow fry in some oil while you make the relish. Chop the cucumber, red onions, green peppers and garlic. Deseed and chop the flesh of the tomatoes. Season and mix with some diced fresh coriander, juice and zest of the limes and some olive oil. Drain the croquettes and serve on a plate with the relish on the side. Serve immediately.
