A festive dish with two of the best flavors on the planet, crab meat and artichokes.
We love artichokes and often order a fresh case from a great farm in California www.pezzinifarms.com/. I ordered a case just before my wife had to take a unscheduled trip. Spent a week alone trying every artichoke recipe I could find.
Discovered, if steamed or blanched for 20-25 minutes easy to remove all outer tough leaves and keep center tender green leaves. Now easy to cut in half (see pictures), and scoop out choke with mellon ball scoop. Makes a beautiful container just beging to hold something tasty. Fooled around for few days with different combinations of crab meat and bingo ended up with one of the best things I have ever tasted in my adult life. As an option if in rush, can skip the stuffing batter and just use lumpy crab meat or lobster meat with nothing else. Cover with garlic butter. Take half of the Crab Meat, Egg Old Bay Seasoning, Mayonnaise, Mustard, Bread Crumbs and Parsley in a blinder. I use a Vita-mix on lowest speed for only 1-15 seconds. Creates a nice crab meet base. Place the base in a bowl and add remaining lumpy Crab Meat to give it some texture. Mix in bowl. This is a modified version of sgrishka, BigOven, Crab Cake Recipe (#163707), but many similar crab cake or crab stuffing recipes would work as well.
Make sure you have medium size artichokes not monster size. Typical weight is about 160-180 grams. These have nice green inner cores of edible leaves. Monsters you might get a grocery store lose those tender leaves. Cut stem and top leaves off artichokes. Place artichokes in a steamer for about 25 minutes. Take out of steamer and remove outer tough leaves unitl hit green leaves. Split in half with sharp knife. Now can see in middle the choke. Take mellon baller and remove choke and few of the inner leves to create a nice pocket (see images).
Few tips, it is important that artichokes are cooked, tasty but firm at this stage. The do not get to cook much more in the 350 degree oven for 30 mins (see below), so how they taste out of steamer is how they will tase at the table.
Take Crab Meet batter and place in balls into the pockets. Spray lightly with oil of you choice, I like Avocado Oil, but Olive Oil is just as good.
Place in oven proof dish or cookie sheet in a 350 degree oven about 30 minutes. I take out and turn on broiler for few minutes. Stick back in just to braze the tops. Can make Hollandaise sauce, or just garlic and butter - anything that works with both Crab Meet and Artichoke.
This is a happy festive dish that guest love, and always want seconds - I usually start with two halves per guest, but most will want 4-6. Great with small seared red potatoes, and or asparagus.
